Lemon Pepper Chicken

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)

  • 4 tbsp Merman’s Revenge® Lemon Pepper Seasoning

  • 2 tbsp olive oil

  • 1 lemon (zested and juiced)

  • 1 cup white rice

  • Fresh parsley, chopped (for garnish)

  • Lemon slices (for garnish)

Preparation Instructions

1. Prepare the Chicken:

  • Pat the chicken breasts dry with paper towels to remove excess moisture.

2. Season the Chicken:

  • Rub the MR Lemon Pepper Seasoning evenly onto both sides of the chicken breasts.

3. Cook the Chicken:

  • Heat the olive oil in a large skillet over medium heat.

  • Once the oil is hot, add the seasoned chicken breasts to the skillet.

  • Cook for 5-7 minutes on each side, depending on the thickness of the chicken, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

4. Add Lemon Juice:

  • Once the chicken is almost done, squeeze the juice of one lemon over the chicken. Let it simmer for an additional 1-2 minutes to let the chicken absorb the lemony flavor.

5. Garnish and Serve:

  • Remove the chicken from the skillet and let it rest for a few minutes.

  • Garnish with freshly chopped parsley and lemon slices.

  • Serve warm alongside your favorite sides like roasted vegetables, rice, or mashed potatoes.

Tips:

  • For extra flavor, you can marinate the chicken in lemon juice, olive oil, and pepper for 30 minutes before seasoning and cooking.

  • This dish pairs well with steamed or roasted veggies and a side of rice or quinoa.
