DIRECTIONS

01

SET UP THE BATTER

Divide the Original Extra Crispy Fish Fry between two bowls: one for dry coating and one for wet batter.

02

MAKE THE WET BATTER

Slowly add water to the second bowl, stirring until smooth and slightly runny. Club soda or ginger ale can be used instead of water.

03

COAT THE OYSTERS

Pat the oysters dry. Coat in dry Fish Fry, dip into the wet batter and return to the dry mix for a final coating. Shake off the excess.

04

COAT THE SHRIMP

Repeat the same dry-wet-dry coating process with the shrimp.

05

FRY THE SEAFOOD

Fry the oysters until golden and crispy. Fry the shrimp until golden and cooked through, then drain the fried seafood.

06

MAKE THE HAWAIIAN SLAW

Combine grilled pineapple, red onion, red bell pepper and celery with Merman's Revenge Blackened Seasoning . Toss with the slaw base.

07

BUILD THE PO' BOYS

Open the rolls and layer in fried shrimp and oysters, alternating the seafood to fill each sandwich.

08

TOP & SERVE

Top generously with Hawaiian slaw and serve immediately while the seafood is hot and crispy.

TIPS FROM
THE MERMAN

01

KEEP THE BATTER SLIGHTLY RUNNY

The chef's method calls for a smooth wet batter that stays slightly runny rather than overly thick.

02

GO DRY-WET-DRY

Use the full dry-wet-dry coating method on both the oysters and shrimp for a crispier finish.

03

TRY THE BUBBLES

Club soda or ginger ale can replace the water when making the wet batter.
