DIRECTIONS

01

PREP THE CHIPS

Cut the potatoes into very thin fries. Soak in cold water for 10 minutes, then drain and dry thoroughly before frying.

02

MAKE THE FRY BATTER

Place some Lemon Pepper Extra Crispy Fish Fry in one bowl for dry coating. In a second bowl, slowly mix more Fish Fry with ginger ale until smooth. Club soda or water can also be used.

03

COAT THE FISH

Coat each mahi fillet in the dry Fish Fry, dip into the wet batter and finish with another layer of dry Fish Fry.

04

FRY & SEASON THE CHIPS

Fry the dried potatoes until golden and crispy. Drain, sprinkle with Cajun Style Seasoning and toss to coat.

05

FRY THE FISH

Carefully lower the coated mahi-mahi into hot oil. Fry until golden, crispy and cooked through. The worksheet specifies an internal temperature of 145°F.

06

MIX THE SAUCE

Combine equal parts Bangin' Sauce and Cocktail Sauce and stir until thoroughly blended.

07

PLATE & SERVE

Serve the crispy mahi-mahi alongside the Cajun-seasoned chips with the dipping sauce.
