Blackened Creamed Corn

Ingredients:

Directions:

1. Toast the seasoning.

  • In a large skillet over medium heat, melt 1 tablespoon butter.

2. Cook the corn.

  • Add the corn kernels and sauté for 2–3 minutes, letting some bits brown slightly for a caramelized flavor.

3. Make the creamy base.

  • Push corn to one side of the skillet. Add the remaining 1 tablespoon butter, 1 tablespoon flour, and cook for about 1 minute to start your cream base. Make sure to stir nonstop, so the flour doesn’t burn.

  • Gradually whisk in your half and half, stirring constantly until thickened (about 3–4 minutes).

4. Combine everything together.

  • Stir the corn back into the creamy sauce. Add cream cheese and sugar.

  • Reduce heat to low and simmer gently for 5–6 minutes, stirring often until thick and luscious.

5. Make your final adjustments.

  • Stir in the final tablespoon of butter for shine and richness.

  • Taste and adjust the seasoning—you can add a sprinkle more Merman’s Revenge Blackened Seasoning.

6. Serve.

  • Transfer to a small serving dish and garnish with your grated Parmesan and a light dusting of Merman’s Revenge Blackened Seasoning for color and spice.

  • Optionally, add a touch of lemon or lime juice for brightness.
