Blackened Creamed Corn

Ingredients:
For the Base:
3 cups corn kernels

2 tablespoons butter
1 cup half and half
1 tablespoon flour

Directions:
1. Toast the seasoning.
In a large skillet over medium heat, melt 1 tablespoon butter.
Add Merman’s Revenge Blackened Seasoning and toast for about 30 seconds, stirring until fragrant.
2. Cook the corn.
Add the corn kernels and sauté for 2–3 minutes, letting some bits brown slightly for a caramelized flavor.
3. Make the creamy base.
Push corn to one side of the skillet. Add the remaining 1 tablespoon butter, 1 tablespoon flour, and cook for about 1 minute to start your cream base. Make sure to stir nonstop, so the flour doesn’t burn.
Gradually whisk in your half and half, stirring constantly until thickened (about 3–4 minutes).
4. Combine everything together.
Stir the corn back into the creamy sauce. Add cream cheese and sugar.
Reduce heat to low and simmer gently for 5–6 minutes, stirring often until thick and luscious.
5. Make your final adjustments.
Stir in the final tablespoon of butter for shine and richness.
Taste and adjust the seasoning—you can add a sprinkle more Merman’s Revenge Blackened Seasoning.
6. Serve.
Transfer to a small serving dish and garnish with your grated Parmesan and a light dusting of Merman’s Revenge Blackened Seasoning for color and spice.
